Raw Foods Soups
Spicy avocado cucumber soup
Equipment Needed - Vitamix Blender, knife, cutting board
3 large avocados1/2 cucumber3 sprigs fresh cilantro1/2 chopped jalapeno1/4 cup sundried black olivesa pinch cayenne pepperpinch of himalayan sea salt
Combine all ingredients except for 1/2 avocado and the olives in a Vitamix Blender. Add water depending on desired consistency and texture
Garnish - dice avocado, pit the olives and chop and garnish your soup
*Health Tip - avocados contain good fats for cellular building and structure and they contribute to the elasticity of the skin
Corn Squash Soup
Equipment - Vitamix Blender, Food processor, knife
5 ears of corn1 butternut squash pureed in a food processor1 cup cashews1/2 teaspoon nutritional yeastrosemaryblack pepperpinch of himalayan sea salt
Blend all ingredients in a Vitamix Blender and serve thick. Garnish with ear corns and some sprouts
*Nutritional Tip - Nutritional yeast is rich in B-vitamins for vegans and raw foodists and contains protein and essential amino acids
Raw Foods Juice Cocktails
Everything Spicy Green Goddess Juice
Equipment - High powered juicer, knife, cutting board
5 stalks of black kale (preferred)1/2 lemon1 apple5 stalks celery1/2 head green cabbage1 cucumber1/2 head broccoli1 small piece of ginger
Juice all ingredients in a high powered juicer. Strain and drink immediately.
Nutritional Tip - This juice is a detoxing skin and liver tonic ideal for the goddess in Everyone!
Raw Foods Salads
Nwenna Kai's favorite apple & parsley salad
1 fuji apple
5 sprigs chopped parsley
3 diced avocados
2 cups mixed greens
1/2 cup cherry tomatoes
1/4 cup raisins
1/4 cup chopped walnuts
1/2 sliced red onions
Combine all ingredients in a big mixing bowl.
Dressing - Just add cold-pressed olive oil, salt, pepper, and a 1/4 teaspoon of fresh Braggs apple cider vinegar.
